Title: hydraulic clutch

Anyone have an idea what the pressures are for a hydraulic clutch system?

No way to guess without knowing what the pressure plate load is. If you use the factor of pressure plate arms being on a 3 to 1 ratio, you have a starting point. If it takes 1000 lbs to depress the pressure plate, you can calculate the area of the clutch slave to arrive at 1000lbs of force. I'm gonna say it's your leg effort multiplied by pedal ratio. Could be 300-400psi apparently, but it won't be the 1,000psi+ of a brake system.
